I tried my very first egg bhurji during my North India vacation at Jaipur as a breakfast to go with my bread toast. I love the way they prepared the egg bhurji, scrambled egg loaded with spices bursting with flavor and a perfect match for bread toast. When i came home this is one dish i want to make and finally i did it and it tastes the same like what i had in Jaipur. Instead serving with bread toast serve this delicious egg bhurji with mushroom puloa
Ingredient
3 large eggs
1 large tomato,chopped
1 large onion,chopped
1 sprig coriander leaves,chopped
2 green chillies,chopped
1/2 tsp turmeric powder
1/4 tsp chilly powder
1/2 tsp lemon juice
1 tbsp vegetable oil
Salt to season
Methods
In a large bowl, beat eggs and salt. Add chopped coriander leaves,tomato and green chillies. Beat till well mixed.
Heat oil in a frying pan, saute onion till translucent and add turmeric and chilly powder. Fry for 25-30 seconds.
Add the egg mixture and stir to scramble the eggs. Cook for 2-3 minutes. Off heat and add lemon juice. Stir to mix well.
Serve over bread toast or as an side dish for pulao or white rice
