Blueberry Cheese Tart



A simple and easy blueberry cheese tart that loaded with flavor can be prepared in a jiffy with ingredients that easily available around us. I bought a pre-cooked blueberry sauce in a nearby store selling baking ingredients out of curiosity. At first thought making blueberry cheesecake with it then changed my mind to try this gorgeous looking tart instead. To my surprise the store bought blueberry sauce was amazing and nothing less in taste with what we cooked at home. Puff pastry,cream cheese and blueberry sauce all in for a delicious tart which can be served over a cup of tea. I love the when the blueberries bursting in my mouth on each bite...yummy




Ingredients

1 sheet frozen puff pastry, thawed
1 cup store bought blueberry sauce
1 cup cream cheese
1 tsp vanilla extract
4-5 tbsp confectioners sugar
3-4 tsbp milk
1 egg
1 tbsp granulated white sugar

Methods

Preheat oven at 180'C and lined a baking tray with parchment paper. Keep aside.

Roll out the puff pastry into 1/2 inch thick and using a sharp knife, make a slit along the edges of the puff pastry making sure to leave the corners intact.

Using a fork, poke the center of the puff pastry to avoid them from puffing up while baking. Place the pastry onto the prepared baking tray and brush the edges with egg was and sprinkle with sugar.

Bake for 25-30 minutes or till golden. Remove from oven and cool completely on a wire rack

Meanwhile, beat the cream cheese,vanilla extract and confectioner sugar and milk. Pour the cheese mixture in the center of the pastry and using a spatula, gently spread to cover the pastry. Top with blueberry sauce.

Slice and enjoy

Yam Cake



This is my elder daughter's favourite snack and she has been pestering me for quite sometimes now for this savoury cake and I'm glad to say i had made them twice to satisfy her cravings. Yam cake is a Chinese delicacy and can be easily found in in Chinese morning market selling breakfast along and usually served with sweet brown sauce and spicy sambal or garlic-chilly sauce.

Every time we visit morning market, this is a must have breakfast for my elder daughter  and now i could make it for her without a visit to the market. Sprinkle with chopped red chillies,chives and crispy fried onion on the bed of creamy and tender yam paste this is absolutely a must try dish.




Ingredients

600g yam,peeled and washed
3 cups water
4-5 shitake mushrooms,finely chopped
1 cup rice flour
2 tbsp all purpose flour
1 tbsp tapioca flour
1 tbsp green pea flour
4 cloves of garlic,chopped
1 tsp ground black pepper
1 tsp Chinese five spice powder
3 tbsp dried shrimp,wash and roughly chopped
3 tbsp vegetable oil
Salt to taste

Garnishing

3 tbs crispy fried shallots
2 red chillies,chopped
2 sprig spring onion, chopped

Methods

Greased a 9'inch tray and keep aside.

Cut the yam into chunks. Steam for 15 minutes or till soft and tender. Keep aside.

In a large bowl, combined green pea flour,rice flour,all purpose flour, tapioca flour and water. The batter should be slightly thick and without lumps. Keep aside.

In a pan, heat oil and saute the garlic and add chopped mushroom. Add five spice powder and season with salt and pepper. Reduce flame to low-medium heat and add the flour mixture and steamed yam. Stir till well mixed.

Pour the mixture into the prepared tray and steam for 35-40 minutes or until done. Remove from steamer.

Once slightly cool, garnish with chopped red chillies,spring onion and fried shallots

Serve with garlic-chilly sauce


Gulkand Chai
